Strawberry & Biscoff Cheesecake

The dessert that tastes like you're getting away with something.

Creamy, biscuity, strawberry-layered, with two scoops of Nourish & Nurture folded through — so while it's busy tasting like cheesecake, it's quietly doing the nourishing bit too. No baking, no oven, no standing over anything. Layer it up, let it chill, eat it standing at the fridge if that's the kind of day it's been.

You'll need:

  • 1 cup Greek yoghurt
  • 2 scoops Nourish & Nurture
  • 2 tablespoons cream cheese
  • 1 tablespoon vanilla extract
  • 1 cup strawberries, chopped
  • 1–2 teaspoons maple syrup
  • 6–8 Biscoff biscuits, whole or crushed, you decide!

Let's make it:

  1. Chop the strawberries, mix them with the maple syrup, and leave them to stand for 10 minutes
  2. Mix the Greek yoghurt, Nourish & Nurture and cream cheese until smooth
  3. Stir in the vanilla extract
  4. Crush the Biscoff biscuits
  5. Layer it up — biscuit, creamy mix, strawberries — and repeat
  6. Finish with strawberries on top and a few biscuit crumbs
  7. Cover and refrigerate for at least 2 hours
  8. Enjoy every last bit... you deserve it, mama!
